Superfood popsicle with matcha & chia seeds
- 30 ml can coconut milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp matcha
- 1/4 cup chia seeds
Add coconut milk, maple syrup, vanilla extract and matcha to a blender and blend until smooth and creamy. Pour in bowl and whisk with chia seeds until well mixed, until any clumps are gone. Let sit for 30 mins, whisking every 10 mins to break up clumps.
Pour the mixture into popsicle molds. Freeze for 30 mins, insert popsicle sticks into center, then pop back into the freezer overnight. To unthaw, run container under faucet til popsicles start to loosen.
